Ingredients
- 3 packets Kodiak Maple & Brown Sugar Peak Oatmeal Packets
- 2/3 cup butternut squash purée
- 1/4 cup maple syrup
- 1/2 cup almond butter
- 1/4 cup milk
- 1/2 teaspoons cinnamon
- 1 cup powdered sugar
- 1-2 tablespoons milk
Directions
- Preheat the oven to 350° F. Line a 8x8” baking pan with parchment paper.
- Place the contents of the oatmeal packets in a mixing bowl along with the butternut squash purée, maple syrup, almond butter, milk, and cinnamon. Mix until well combined.
- Spoon the mixture into the prepared baking pan and carefully spread out until evenly distributed and smooth on top.
- Bake in the preheated oven for 20 to 25 minutes, or until cooked through. Remove from the oven and let cool completely.
- Once cool, remove from the pan and place on a cutting board. Cut into 12 bars.
- Place the powdered sugar and milk in a small mixing bowl. Whisk together until smooth, adding more or less milk, to achieve the desired consistency.
- Drizzle the icing over the top of the butternut squash oatmeal bars.
- Store in an airtight container.
