When the summer heat becomes unbearable, reach into your freezer for a refreshing Cheesecake Popsicle. Made with crushed Kodiak® Maple Brown Sugar Granola Bars and a handful of other household ingredients, this sweet treat packs 9 grams of protein into a simple and easy dessert that only takes 5 minutes to prep. With a creamy texture perfectly complemented by a subtle crunch, you’ll want to keep your freezer stocked with this satisfying summer staple.

Ingredients
- 8 ounces cream cheese, softened
- 16 ounces coconut flavored Greek yogurt
- 1/2 cup heavy cream
- 1/2 cup sugar
- 2 packages Kodiak Maple Brown Sugar Crunchy Granola Bars (4 bars total)
Directions
- Place the cream cheese, yogurt, and heavy cream in a blender or food processor and blend until very smooth.
- Place the granola bars in a Ziploc bag, seal, and crush with a rolling pin or mallet until coarsely crumbly.
- Divide the cheesecake mixture and the granola bar crumbles evenly between 12 popsicle molds, layering the two in each mold.
- Place popsicle sticks halfway down the center of each popsicle mold.
- Freeze the popsicle molds for at least 4 hours or overnight.
- Remove popsicles from molds by running molds under hot water briefly. Keep Popsicles in an airtight container or bag and keep frozen.
