Ingredients
For the scones:
- 1 box Kodiak Chocolate Chip Muffin Mix
- 1 teaspoon cinnamon
- 2 teaspoons baking powder
- 5 tablespoons butter, cold
- 1 teaspoon vanilla extract
- 3⁄4 cup heavy whipping cream
For the icing:
- 2 tablespoons butter
- 1⁄2 cup confectioners sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1-2 tablespoons milk
Directions
To make the scones:
- Preheat the oven to 400° F. Line a baking sheet with tin foil.
- Combine dry ingredients in a medium mixing bowl. Cut the butter into the dry ingredients. Make a well in the center of the dry ingredients and pour the cream and vanilla into the well.
- Mix everything together using your fingers until just barely combined. Do not over mix or scones will be tough. Let sit for 5 minutes.
- Turn the dough out onto a well-floured surface. Gently press the dough down into a 1-1⁄2” thick circle. Cut into triangles and place 1-1/2′′ apart on a baking sheet.
- Bake at 400° F for 5 minutes, then reduce the heat to 350 degrees and bake for about 10-12 minutes more. Remove before they are more than lightly browned.
- Let cool on a wire rack.
To make the icing:
- Melt the butter in a saucepan over medium high heat. Continue to cook until the butter foams and turns a golden-brown color.
- Pour into a mixing bowl and let cool.
- Whisk in the confectioners sugar, cinnamon, and vanilla. Thin to desired consistency by whisking in milk, a little at a time.
- Drizzle over cooled scones.
- Store in an airtight container.
