Ingredients
- 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 2/3 cups ricotta
- Zest of 1 small orange
- 1-1/2 cups water
- 4 tablespoons butter, softened
- 1/4 cup orange marmalade
Directions
- Place the Kodiak mix, ricotta, orange zest, and water in a mixing bowl.
- Whisk together to make a smooth batter. Let rest for 5 minutes.
- Place the butter and marmalade in a small bowl and whisk together until combined. Set aside.
- Heat a skillet to medium on a stovetop. Grease with butter.
- Pour ¼ cup portions of batter into rounds on the heated skillet and cook until puffed and bubbly on top.
- Flip and cook pancakes until golden brown on both sides.
- Serve topped with the marmalade butter spread.
