Ingredients

  • 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 2/3 cups ricotta 
  • Zest of 1 small orange 
  • 1-1/2 cups water
  • 4 tablespoons butter, softened 
  • 1/4 cup orange marmalade

Directions

  1. Place the Kodiak mix, ricotta, orange zest, and water in a mixing bowl.
  2. Whisk together to make a smooth batter. Let rest for 5 minutes.
  3. Place the butter and marmalade in a small bowl and whisk together until combined. Set aside.
  4. Heat a skillet to medium on a stovetop. Grease with butter.
  5. Pour ¼ cup portions of batter into rounds on the heated skillet and cook until puffed and bubbly on top.
  6. Flip and cook pancakes until golden brown on both sides.
  7. Serve topped with the marmalade butter spread.
