Ingredients
- 5 Kodiak Buttermilk & Vanilla Power Waffles, quartered
- 3 ripe peaches, pitted and sliced
- 4 large eggs
- 1 cup whole milk
- 3/4 cup brown sugar, divided
- 1 teaspoon vanilla
- 1 cup Kodiak Classic Rolled Oats Oatmeal Canister
- 4 tablespoons butter
Directions
- Preheat the oven to 350° F. Grease a 9x9” baking pan or pie dish.
- Layer the quartered waffles and sliced peaches along the bottom of the prepared pan.
- Place the eggs, milk, 1/2 cup of the brown sugar, and vanilla in a mixing bowl, and whisk together until smooth.
- Pour the liquid over the waffle and peach layers. Let sit for 30 minutes (or cover and store overnight and resume baking steps in the morning).
- Place the protein oatmeal, reserved 1/4 cup of brown sugar, and butter in a small mixing bowl and blend together with a pastry cutter until butter pieces are the size of small peas.
- Sprinkle the crumble mixture over the top of the waffle mixture.
- Bake in the preheated oven for 45 to 50 minutes, or until fully cooked in the center.
- Serve scoops of the waffle bake topped with whipped cream, or Greek yogurt, if desired.
